Stir Fried Beef With Rice Noodles (High-Protein)
Seared beef sirloin strips tossed with rice noodles, egg, and a fish-sauce-and-soy glaze, boosted with edamame for protein. Garlic and shallot carry the aromatics, scallion and cilantro finish it fresh, and lime brightens the wok-charred noodles and vegetables.

Instructions
1
Prep
Slice the beef sirloin thin against the grain, mince the garlic and shallot, and soak the rice noodles in warm water for 10 minutes until pliable.
2
Marinate
Toss the sliced beef with fish sauce, soy sauce, oyster sauce, and brown sugar in a small bowl for 10 minutes.
3
Sear
Heat a wok over high heat, add half the vegetable oil, and sear the beef in a single layer for about 2 minutes until browned but still pink in the center.
4
Toss
Add remaining oil, garlic, and shallot; cook for 30 seconds over medium-high heat until fragrant, then crack the egg into the wok and scramble for 45 seconds.
5
Build
Add noodles, bell pepper, bean sprout, and edamame to the wok and toss over high heat for 2 minutes until glossy; return beef, toss with remaining sauce for 1 minute.
6
Plate
Pile the noodles onto a plate, scatter scallion and cilantro over the top, season with black pepper, and serve with lime wedge for squeezing.
