Steamed Egg Custard (Keto)

Instructions

1
Prep Crack the 4 eggs into a bowl and whisk with a fork until fully combined with no streaks. Add the chicken stock, sesame oil and salt, then whisk gently until smooth and uniform, avoiding excess bubbles.
2
Prep Grease a small heatproof bowl with butter. Strain the egg mixture through a fine sieve to remove foam and chalazae, then slice the scallion thinly.
3
Steam Set the bowl in a steamer over medium heat with simmering water; cover loosely and steam 10–12 minutes until just set with a gentle wobble in the centre.
4
Plate Lift the bowl out of the steamer, scatter the scallion and sesame seeds over the top, and serve immediately while warm.
