Spicy Grilled Chicken Feet Salad

Grilled chicken feet tossed in a Thai dressing of lime juice, fish sauce, sugar and dried chili, finished with shallot, cilantro, mint and roasted rice powder. Sticky, charred and gelatinous in texture, the salad delivers sour-hot-funky Isaan flavours over crisp raw vegetables, eaten with sticky rice on the side.

2
Boil Bring a pot of water to rolling boil over high heat and cook feet 15 minutes until skin is tender and pulling from bone.
3
Grill Rub boiled feet with vegetable oil and grill on a hot grill pan over medium-high heat 5 minutes, turning often, until skin blisters and darkly charred.
4
Toss In a mixing bowl, whisk lime juice, fish sauce and sugar until dissolved, add dried chili flakes and chicken feet, then fold in shallot, scallion, red chili and roasted rice powder until coated.
5
Finish Let salad rest 15 minutes at room temperature until feet absorb dressing and turn glossy, then fold in cilantro and mint leaves just before serving.
