Instructions
1
Prep
Cut the beef sirloin into bite-sized cubes. Slice the chorizo, Manchego, baguette, piquillo peppers and cherry tomatoes, keeping each in its own pile.
2
Sear
Heat olive oil in a skillet over medium-high heat. Sear beef cubes for 5 minutes, turning occasionally, until deeply browned outside and just pink inside.
3
Bloom
Add minced garlic and smoked paprika to the skillet over medium heat. Cook for 1 minute, stirring, until the raw garlic smell fades and paprika darkens slightly.
4
Grill
Cook chorizo slices in a dry pan over medium heat for 3 minutes total, turning halfway through, until edges char and fat renders at the surface.
5
Deglaze
Pour sherry vinegar into the skillet and stir for 30 seconds, scraping up browned bits until the liquid reduces to a light glaze coating the beef.
6
Plate
Arrange beef, chorizo, Manchego, almonds, piquillo peppers, baguette, olives and tomatoes across a wooden board in small clusters. Season with salt and pepper, scatter parsley over, and serve warm.
