Spiced Minced Meat Rice
Ground lamb simmered with onion, ginger-garlic paste, tomato and warm garam masala, cumin and turmeric spooned over basmati rice. The mince cooks to a thick, glossy coating that clings to each grain, finished with cilantro and lime for brightness.

Instructions
1
Prep
Measure the ginger-garlic paste, garam masala, cumin, turmeric and chili powder so they are ready to add in sequence.
2
Heat the vegetable oil in a small skillet over medium heat and cook the onion for 4 to 5 minutes, stirring occasionally, until soft and translucent.
3
Add the lamb mince to the skillet, breaking it up with a spoon, and cook over medium-high heat for 6 to 7 minutes until no pink remains.
4
Stir in the canned tomatoes, garam masala, cumin, turmeric and chili powder, then simmer over medium-low heat for 8 to 10 minutes until the sauce thickens and coats the meat.
5
Taste the mince and season with salt as needed, adjusting until balanced.
6
Plate
Spoon the basmati rice onto a plate, top with the spiced lamb mince, scatter the cilantro over and serve with the lime wedge.
