Instructions
1
Prep
Finely grate the onion and garlic. In a mixing bowl, combine ground lamb and beef with 1 garlic clove, cumin, cinnamon, allspice, coriander, grated onion, parsley, 1/4 tsp salt and black pepper; mix until evenly combined and shape into one 1.5cm-thick oval patty.
2
Prep
Quick-pickle the red onion slices in white wine vinegar and a pinch of salt, tossing to coat; set aside for 10 minutes.
3
Sear
Heat olive oil in a skillet over medium-high heat. Sear the patty 3–4 minutes per side until deep brown crust forms and centre reaches 71°C with no pink juices.
4
Prep
Stir remaining grated garlic and lemon juice into yogurt with a pinch of salt. Warm pita in skillet over medium heat for 30 seconds per side until pliable, split to form pocket, spread in yogurt sauce, layer arugula, tomato and pickled onion, tuck in patty and plate on a diagonal.
