Prep
Drain and flake 240g canned tuna. Scoop 140g avocado flesh into a small bowl. Slice spring onion green tops, grate ginger, zest lime, juice lime, measure sriracha, sesame oil, salt, pepper, and sesame seeds.

Build
Mash avocado with lime juice, zest, sriracha, sesame oil, salt, and pepper using a fork until mostly smooth with texture. Add tuna, ginger, and spring onions; smash together until combined but chunky. Taste and adjust heat or brightness.

Finish
Transfer smash to an airtight container, scatter sesame seeds on top, press parchment directly onto surface, and refrigerate up to 2 days. Avocado will darken slightly but lime juice slows oxidation.

Plate
Toast 1 slice wholemeal sourdough per serving (or warm 1 wrap) and scoop roughly 120g smash onto bread. Serve with sliced cucumber, baby carrots, or celery sticks for cooling crunch.
