Prep
Cook turkey bacon until crisp, chop finely. Grate sharp cheddar, drain and chop pickled jalapeños, chop chives. In a blender, combine egg whites, whole egg, cottage cheese, 16g cheddar, smoked paprika, salt, and pepper; blend 30 seconds until smooth. Brush 4 muffin holes with olive oil.

Bake
Preheat oven to 150°C (300°F). Divide turkey bacon, jalapeños, remaining 8g cheddar, and chives among greased holes. Pour egg mixture three-quarters full. Place tin in roasting pan, pour boiling water halfway up sides. Bake 24–26 minutes until set with gentle centre wobble.

Cool and plate
Cool in tin 10 minutes, run knife around each bite and transfer to rack. Cool fully, portion into 2 airtight containers (2 bites each), refrigerate up to 4 days. Reheat in microwave 35 seconds or oven at 160°C for 5 minutes, serve with cucumber, cherry tomatoes, or yogurt dip.
