Prep
Cut 384g chicken breast into 12 bite-size cubes. In a large bowl, combine chicken with olive oil, zest of 1 lemon, lemon juice, grated garlic, cracked black pepper, lemon pepper seasoning, thyme, and salt. Toss to coat. Rest 5 minutes.

Roast
Preheat air fryer to 200C (400F) for 3 minutes. Arrange all 12 cubes in a single layer with space between. Spray lightly with olive oil. Air-fry 10-12 minutes, shaking halfway, until internal temperature reaches 74C (165F).
