Score the duck skin on both breasts in a crosshatch pattern and rub all over with salt, pepper, and smoked paprika. Heat the smoker to 120C/250F.

Smoke
Set both duck breasts skin-side up over low heat. Smoke 60–70 minutes until the skin is bronzed and the centre reaches 57C for medium.

Build
Segment the oranges over a bowl to catch the juice. Whisk the juice with olive oil and honey, then toss through the watercress.

Plate
Rest the duck 5 minutes, then slice thinly across the grain. Fan the sliced duck over the dressed watercress and orange segments to serve.
