Instructions
1
Prep
Slice the beef sirloin thinly against the grain and pat dry. Slice the onion into half-moons and bell pepper into strips. Mince the garlic.
2
Sear
Heat olive oil in a nonstick skillet over high heat until shimmering. Add beef in a single layer and sear 1–2 minutes per side until deeply browned.
3
Char
Add onion and bell pepper to the skillet over medium-high heat. Cook 5–6 minutes, stirring occasionally, until edges char and onion softens.
4
Bloom
Stir in garlic, cumin, chili powder and smoked paprika. Cook over medium heat 1 minute until fragrant.
5
Return
Add beef and juices back to the skillet and toss over medium-high heat 1 minute until warmed through.
6
Rest
Remove from heat and let sit 5 minutes so juices settle into the meat.
7
Plate
Spoon rice onto a plate, top with steak and onions, squeeze lime juice over the top and scatter with cilantro.
