Sizzling Beef Strips

Thin-sliced beef sirloin seared hard on a screaming-hot cast-iron griddle with garlic, ginger and a soy-mirin-sake glaze, finished with scallion and sesame seeds. Yakiniku-style grilling yields a caramelized crust and juicy centre, served over steamed white rice with lemon.
