Thai Crispy Pork Belly Wraps

Crispy-skinned pork belly, oven-roasted then rested and sliced, wrapped in soft lettuce leaves with pickled cucumber, herbs, and a tangy-sweet lime-fish sauce dressing. Rice noodles add bite, while cilantro, mint, and crushed peanuts bring freshness and crunch to a Thai-style handheld built around rendered, shatteringly crisp pork fat.

Instructions

1
Prep Pat pork belly skin dry with paper towels, then score in a tight crosshatch pattern with a sharp knife, cutting through fat but not meat.
2
Prep Rub salt firmly into the scored skin and let the belly sit uncovered on a rack in the fridge for 15 minutes to dry further.
3
Roast Place pork belly skin-side up on a rack over a tray and roast at 425°F for 45 minutes until the skin blisters, turns deep golden, and cracks.
4
Rest Remove the pork from the oven and let it rest on the rack for 10 minutes so juices settle before slicing.
5
Build Lay out lettuce leaves and divide rice noodles, cucumber, cilantro, mint, and chili among them. Mince the garlic and slice the cucumber, chili, cilantro, and mint. Top with pork belly strips, drizzle with fish sauce dressing, sprinkle crushed peanuts.
6
Plate Serve the wraps immediately while the pork is warm and the skin remains crisp.
