Instructions
1
Prep
Slice the chicken thigh into thin cutlets, about 1/2 inch (1 cm) thick, so the marinade penetrates fully and the meat cooks evenly.
2
Marinate
In a bowl, combine yogurt, grated garlic, olive oil, smoked paprika, cumin, red pepper flakes, salt and black pepper; add chicken and coat thoroughly; refrigerate 2 hours.
3
Sear
Heat a heavy skillet over medium-high with 1 tsp olive oil and lay chicken cutlets in a single layer; sear 4 to 5 minutes per side until deeply charred and no longer pink at the centre.
4
Rest
Transfer chicken to a board and rest 3 minutes, then slice into thin strips against the grain.
5
Plate
Warm lavash briefly in the dry skillet, spread garlic yogurt sauce (made from 2 tbsp yogurt, 1 small garlic clove grated, pinch of salt) down centre, layer chicken, tomato, sauerkraut, sliced and sumac-coated onion, and parsley; fold sides in and roll tightly.
