Grilled Cheese (Low-Calorie)

A lightened grilled cheese built on whole wheat bread with reduced-fat cheddar and low-fat cottage cheese for creaminess. The outside toasts in a nonstick pan brushed with olive oil rather than buttered, keeping calories lower while holding a crisp golden crust, finished with chives and black pepper.
