French Ham Cheese and Egg Sandwich (Gluten-Free)
A French bistro sandwich layering baked ham, Emmental cheese and a soft fried egg between buttered gluten-free bread, pan-toasted until golden. The runny egg yolk mingles with melted cheese, delivering a rich, savoury bite similar to a croque madame in handheld form.

Instructions
1
Prep
Spread Dijon mustard thinly over one inner face of each gluten-free bread slice.
2
Sear
Melt half the butter in a skillet over medium heat. Layer ham and Emmental onto one slice, close with the second slice mustard-side in, and toast 3 minutes per side until bread is golden and cheese melts.
3
Fry
Melt remaining butter in a small nonstick pan over medium-low heat. Fry the egg 2 to 3 minutes until white is set but yolk still jiggles.
4
Plate
Top the toasted sandwich with the fried egg, season with black pepper and salt, and serve immediately.
