Prep
Place two tall glasses in the freezer for 5 minutes until frosted. Chill the root beer in the fridge. Measure out 4 scoops vanilla ice cream (240g), 700ml root beer, 4 tbsp whipped cream, and 2 maraschino cherries for garnish.

Build
Remove the frosted glasses from freezer. Place 2 scoops of vanilla ice cream into the bottom of each chilled glass, nestling them side by side.

Finish
Tilt each glass at a 45-degree angle. Slowly pour 350ml of chilled root beer down the inside of each glass over the ice cream, pouring gently to control foam rise. As foam settles, top up with more root beer, leaving 2cm headspace in each glass.

Plate
Crown each float with 2 tbsp whipped cream and place a maraschino cherry on top. Serve immediately with long spoons and thick straws alongside.
