Instructions
1
Prep
Cut the turkey thigh into bite-sized chunks and pat dry. Stem, seed, and chop the onion and garlic. Toast the dried chilies in a dry skillet over medium heat for 30-45 seconds per side until they darken slightly.
2
Sear
Heat the oil in the skillet over medium-high heat and sear the turkey chunks for 4-5 minutes, turning occasionally, until browned on most sides.
3
Saute
Push the turkey aside, add the chopped onion and garlic, and saute over medium heat for 2-3 minutes until softened.
4
Simmer
Blend the toasted chilies, canned tomatoes, sauteed onion and garlic, and chicken stock until smooth. Pour into the skillet with the turkey, stir in the cinnamon, cumin, and salt, and simmer over medium-low heat for 20-25 minutes until the turkey is tender.
5
Plate
Stir in the chocolate and toasted sesame seeds, reduce the sauce over low heat for 3-5 minutes until glossy, then spoon over cooked rice and scatter with extra sesame seeds.
