Fried Potato and Meat Croquette

Japanese korokke is a deep-fried croquette made from mashed potato mixed with soy-sauce-simmered ground beef and onion, coated in panko breadcrumbs, and fried until golden. Served with shredded cabbage and tangy tonkatsu-style sauce, it pairs a soft savory interior with a crisp exterior.

Instructions

1
Prep Peel and cube potato, place in a saucepan, cover with water, and boil over high heat for 12 minutes until very tender.
2
Sauté Meanwhile, heat 1 tsp vegetable oil in a skillet over medium heat, add onion, and cook for 3 minutes until softened and translucent.
3
Brown Add ground beef to the skillet, increase heat to medium-high, and cook for 4 minutes, breaking it apart, until no pink remains.
4
Simmer Stir soy sauce, sugar, nutmeg, salt, and black pepper into the beef; simmer over low heat for 2 minutes until the mixture glazes.
5
Fold Drain potato, mash until smooth in a bowl, then fold in the beef mixture until evenly combined. Chill for 15 minutes until firm.
6
Build Divide the mixture into two portions and shape each into an oval patty approximately 1.5 cm thick.
7
Dredge Coat each patty in flour, dip in beaten egg, then press firmly into panko breadcrumbs until fully covered.
8
Fry Heat the vegetable oil to 340°F (170°C) and fry croquettes for 3 to 4 minutes, turning once, until deep golden and crisp.
9
Drain Transfer croquettes onto a paper towel for 1 minute to drain excess oil.
10
Plate Set croquettes on a plate beside the shredded cabbage, drizzle with tonkatsu sauce, and serve with lemon wedge.
