Dried Fish Broth Noodle Soup
Small dried sardines are simmered with kombu to build a smoky, savoury broth, seasoned with soy sauce and mirin, then poured over wheat noodles. Topped with a soft-boiled egg and scallion, the soup balances umami depth from the dried fish stock with clean, briny simplicity.

Instructions
1
Prep
Snap the heads and dark visceral bits off the dried sardines, rinse the bodies briefly under cold water to remove excess dust and bitterness.
2
Steep
Place the cleaned sardines and kombu in a pot with water and let sit off heat for 15 minutes until kombu softens and flavors the liquid.
3
Simmer
Bring the pot to a gentle simmer over medium heat for 10 minutes until broth turns pale amber, then strain through a fine sieve, pressing lightly to extract liquid.
4
Season
Stir soy sauce, mirin, and salt into the strained broth and keep warm over low heat, tasting until savory and lightly sweet without tasting flat.
5
Poach
Bring a small pot of water to boil over high heat, lower in the egg, cook 6 minutes for soft-set yolk, then transfer to cold water, peel and halve.
6
Boil
Cook wheat noodles in a separate pot of boiling water over high heat for 3 to 4 minutes until tender but springy, then drain well.
7
Build
Place drained noodles in a deep bowl and ladle hot seasoned broth over them until just covered.
8
Plate
Arrange the halved soft-boiled egg and scallion on top of the noodles, finish with a few drops of sesame oil.
