Rice with Currants and Pine Nuts (Low-Calorie)

A lighter Turkish pilaf pairing seared diced chicken breast with basmati rice, plumped currants, toasted pine nuts and warm allspice. Sautéed onion builds sweetness while the rice is finished in reduced stock rather than butter-heavy liquid, keeping the dish light, fragrant and citrus-brightened with fresh lemon and parsley.

Toast Place pine nuts in dry skillet over medium-low heat for 2 minutes, shaking often, until golden and fragrant.
3
Sear Heat olive oil in medium saucepan over medium-high heat and sear chicken for 3–4 minutes, turning occasionally, until opaque throughout.

Sweat Push chicken to side, add onion and sweat over medium heat for 3 minutes, stirring, until softened and translucent.
5
Bloom Stir allspice into pan; cook over medium heat 30 seconds until fragrant.
6
