Instructions

1
Prep Trim excess fat from pork ribs and cut into 2-3 sections; stem and seed the ancho and guajillo chilies.
2
Toast the dried chilies in a dry skillet over medium heat 1-2 minutes, pressing flat, until they puff slightly and smell smoky but not blackened.
3
Cover the toasted chilies with hot water in a bowl and let soak 15 minutes.
4
Blend the softened chilies with onion, garlic, canned tomatoes and cumin in a blender until a smooth, thick red puree forms.
5
Heat vegetable oil in a heavy pot over medium-high heat and brown pork ribs on all sides 6-8 minutes until deeply colored.
6
Pour chili puree and chicken stock over ribs, add oregano and salt, bring to simmer over medium heat, then cover and braise over low heat 75-90 minutes until meat pulls easily from bone.
7
Uncover pot and simmer over medium-low heat 5-10 minutes, skimming surface fat, until sauce coats the back of a spoon.
8
Plate Ladle ribs and sauce into a bowl and serve with lime wedge and warmed corn tortilla.
