Pork and Chive Egg Pancake
A folded Chinese-style omelette made by whisking eggs with minced pork and chopped garlic chives, then pan-frying until set and lightly browned. The pork releases savoury juice into the egg while cooking, seasoned with soy sauce and white pepper. Served plain as a simple home-style dish.

Instructions
1
Prep
Chop the garlic chives into 1/2-inch pieces and break up the pork into small pieces so no clumps remain.
2
Whisk
In a medium bowl, whisk the eggs with the soy sauce, sesame oil, white pepper, and salt until fully combined and slightly frothy.
3
Fry
Heat the vegetable oil in a small nonstick pan over medium heat until it shimmers, then pour in the egg mixture and spread to the edges.
4
Fold
Cook undisturbed over medium-low heat for 3 minutes until the underside is golden and the top is just set. Using a spatula, fold the pancake in half and cook 2 more minutes until no pink pork remains and juices run clear.
5
Plate
Slide the pancake onto a plate and cut into wedges before serving.
