Instructions
1
Prep
Finely chop onion and mince garlic, chop thyme leaves. Mix ground pork with Dijon mustard, onion, garlic, thyme, nutmeg, salt and pepper until combined, shape into a 4-inch log.
2
Build
Lay phyllo sheets on a clean surface and brush lightly with olive oil. Place pork log along one edge and roll up tightly, tucking in ends to fully enclose the filling.
3
Chill
Refrigerate wrapped roll on a plate for 10 minutes until phyllo firms up and holds its shape.
4
Bake
Place seam-side down on parchment-lined sheet, brush with beaten egg, and bake at 400°F (200°C) for 22 to 25 minutes until phyllo is golden and pork reaches 160°F (71°C) internally.
5
Plate
Slice roll diagonally into two or three pieces and arrange on a plate alongside salad greens.
