Instructions
1
Prep
Pat the trout fillet dry, season both sides with salt and black pepper, and place skin-side down on a parchment-lined baking sheet.
2
Toast the almonds in a dry skillet over medium heat for 2–3 minutes, shaking frequently, until golden and fragrant.
3
Bake
Sprinkle Parmesan over the trout and bake at 400°F for 10–12 minutes until the flesh turns opaque and flakes easily with a fork.
4
Sauté
Toss green beans with olive oil in a skillet over medium-high heat and cook 4–5 minutes, stirring occasionally, until bright green and crisp-tender.
5
Melt the butter in a skillet over medium heat for 2–3 minutes, swirling constantly, until the milk solids turn golden brown and smell nutty.
6
Stir the garlic, toasted almonds, lemon juice and parsley into the brown butter and cook 30 seconds over low heat until fragrant.
7
Plate
Set the baked trout on a plate beside the sautéed green beans, spoon the almond brown butter over the fillet, and serve with lemon wedges.
