Mix salt, sugar, yuzu juice, lime zest, rum, mint, and white pepper into a rough paste. Spread half the cure in a shallow dish, place salmon skin-side down, pack remaining cure firmly over flesh. Cover tightly with cling film. Refrigerate 10–12 hours until rum and yuzu penetrate deeply.

Rinse cured salmon completely under cold water and pat dry. Mix crème fraîche, yuzu juice, honey, and salt until smooth. Slice salmon very thinly at an angle, discarding skin.

Spread yuzu crème fraîche over each rye crispbread. Layer salmon slices, cucumber, and radishes over crème fraîche. Scatter mint leaves and capers on top. Serve with lime wedges.
