Instructions
1
Prep
Halve and seed the bitter melon, then thinly slice it along with the cabbage, carrot, and bell pepper; beat the eggs in a small bowl.
2
Saute
Heat sesame oil in a wok over medium-high heat, add the minced garlic, grated ginger, and sliced scallion; stir 30 seconds until fragrant and pale gold.
3
Stir-fry
Add sliced bitter melon to the wok and toss over medium-high heat for 3 minutes until the edges soften and turn duller green.
4
Stir-fry
Add shredded cabbage, julienned carrot, and sliced bell pepper; toss constantly over medium-high heat for 3 minutes until cabbage wilts and carrot is tender-crisp.
5
Scramble
Push vegetables to one side, pour beaten egg into the cleared space, let set 20 seconds, then fold through over medium heat for 1 minute until just cooked through but still moist.
6
Finish
Drizzle tamari and mirin over the stir-fry, season with salt and black pepper, and toss for 30 seconds over medium heat until glossy and evenly coated.
7
Plate
Transfer to a plate, scatter toasted sesame seeds and extra sliced scallion over the top, and serve hot.
