Instructions
1
Prep
Pat fish and shrimp dry; scrub clams under cold water; steep saffron threads in 2 tbsp warm stock until deep amber, about 5 minutes.
2
Heat olive oil in a wide shallow pan over medium heat. Add garlic and onion; cook 3–4 minutes until softened and translucent, then add grated tomato, tomato paste and smoked paprika.
3
Cook the sofrito over medium heat 2–3 minutes until the raw tomato smell fades and the mixture darkens to brick-red, then add rice and stir for 1 minute until grains look glossy.
4
Pour fish stock, chicken stock and saffron liquid into the pan, stir to distribute, and bring to a boil over high heat; reduce to low and simmer uncovered 12 minutes until rice is mostly tender.
5
Nestle clams, shrimp and fish into the rice; cover and simmer over low heat 6–8 minutes until clams open, shrimp turn opaque pink, and fish flakes easily.
6
Plate
Remove from heat, cover loosely with foil and rest 5 minutes. Scatter parsley over rice, tuck lemon wedge alongside, and serve from the pan.
