Mussel and Saffron Soup

A Provençal-style seafood soup pairing fresh mussels with saffron-infused fish stock, leeks, fennel, and white fish, finished with cream and a touch of anise. Served with grilled baguette. Bright, briny broth balances the perfume of saffron against the seafood.

Instructions

1
Prep Scrub and debeard the mussels under cold running water, discarding any that stay open when tapped. Thinly slice the leek and fennel; mince the garlic; chop the tarragon.
2
Sweat Warm the olive oil in a medium pot over medium heat and sweat the leek, fennel, and garlic for 4 minutes until softened and translucent.
3
Deglaze Pour in the white wine and simmer over medium heat for 2 minutes until the alcohol smell fades, scraping the base of the pot.
4
Simmer Add the fish stock and saffron threads, bring to a gentle simmer over medium heat, and cook for 8 minutes until the broth turns golden and fragrant.
5
Poach Lower heat to medium-low, add the fish chunks, and poach for 3 minutes until opaque and just beginning to flake.
6
Steam Add the mussels, cover, and steam over medium heat for 4 minutes until shells open; discard any that remain closed.
7
Finish Stir in the cream and tarragon off the heat, season with salt and pepper.
8
Plate Ladle the soup and mussels into a warmed bowl and serve with grilled baguette alongside.
