Prep
Soak 80g Medjool dates in warm water 10 minutes, drain. Remove stems from 48g dried figs, roughly chop. Measure 72g raw walnut halves, 10g chia seeds, vanilla, cinnamon, salt. Finely chop 16g raw walnuts for coating.

Build
In a food processor, pulse 72g walnuts 6–8 times until coarsely chopped with texture. Add soaked dates, figs, chia seeds, vanilla, cinnamon, and salt. Blend on medium speed until a thick, sticky dough forms, about 1–2 minutes.

Finish
Scrape bowl sides, pulse 15 seconds to fully incorporate. Scoop dough into 6 portions of roughly 35g each, roll firmly between palms into balls. Roll each bite in chopped walnuts to coat all sides evenly.

Plate
Arrange bites on a lined tray, refrigerate 30 minutes to firm. Portion into 2 airtight containers (3 bites per container), refrigerate up to 5 days or freeze up to 60 days. Serve with fresh grapes or apple wedges.
