Prep Whisk white miso paste, sesame oil, and grated ginger with 2 tsp water into a smooth paste. Finely slice spring onions, dice cucumber, crumble nori, and measure chia seeds and sesame seeds.

Build Spoon cottage cheese into two bowls. Swirl half the miso mixture through each bowl with a spoon, leaving visible streaks rather than fully mixing.

Finish Top each bowl with diced cucumber and half the sliced spring onions in loose clusters. Scatter crumbled nori, chia seeds, toasted sesame seeds, and remaining spring onions across the top of both bowls.
