Instructions

1
Prep Cool the cooked basmati rice to room temperature on a plate, lightly mashing a few grains so rice binds smoothly with yogurt.
2
Whisk the plain yogurt with whole milk until smooth and loosened, about 30 seconds, so it coats the rice rather than clumping.
3
Heat the mustard oil in a small pan over medium heat for 1 minute, add mustard seeds and let them sputter for about 20 seconds, then add curry leaves, dried chili and asafoetida; cook 25 seconds until curry leaves crisp and asafoetida's raw smell fades.
4
Stir the ginger into the tempering over low heat for 15 seconds until fragrant, then fold the tempering and yogurt mixture with salt into the cooled rice until every grain coats evenly and no dry rice remains, working gently to keep grains whole.
5
Chill the bowl in the refrigerator for 10 minutes so flavors settle and rice cools further.
6
Plate Spoon the yogurt rice into a bowl, scatter cilantro and pomegranate seeds over the top, and serve cool.
