Lentil Salad with Sausage (Low-Chol)

A French bistro salad of braised green lentils tossed warm with sliced chicken sausage, shallot, and a sherry vinegar mustard dressing. Fresh parsley and diced celery add crunch and brightness. Lean sausage and yogurt-free dressing keep saturated fat and cholesterol low while the dish stays satisfying and rustic.
