Instructions

1
Prep Peel the potato and cut into 1.5-inch cubes, then toss with rice flour until lightly coated on all sides.
2
Boil Place the potato cubes in a small pot of salted water over high heat, bring to a boil, and cook 6–8 minutes until just tender. Drain and let steam-dry 5 minutes.
3
Fry Heat the vegetable oil in a small deep skillet to 300°F over medium heat. Fry the potato cubes 4–5 minutes until pale and set, then drain on a paper towel.
4
Rest Let the par-fried potatoes sit uncovered 10 minutes.
5
Crisp Heat the oil to 375°F over medium-high heat. Fry the potatoes 3–4 minutes until deep golden and crisp, then drain on a paper towel.
6
Simmer Mince the garlic for the sauce. Combine the tomatoes, minced garlic, smoked paprika, and cayenne in a small saucepan over medium-low heat and simmer 6–8 minutes until thickened.
7
Finish Stir the sherry vinegar and a pinch of salt into the tomato sauce off the heat.
8
Whisk Mince the remaining garlic for the aioli. Whisk together the mayonnaise, minced garlic, and lemon juice until smooth and glossy.
9
Plate Pile the crisped potatoes on a small plate, spoon the bravas sauce over the top, and drizzle the aioli in stripes.
