Instructions
1
Prep
Dice the cooked ham into small cubes and grate the gruyere cheese, setting both aside.
2
Melt
Melt the butter in a small saucepan over medium heat until foaming, about 30 seconds.
3
Whisk
Whisk the flour into the melted butter and cook over medium-low heat 1 minute until pale gold.
4
Simmer
Gradually whisk in the milk and cook over medium heat 3–4 minutes, stirring constantly, until thickened.
5
Fold
Off the heat, stir in the diced ham, grated gruyere, nutmeg, salt, pepper, and beaten egg until smooth.
6
Chill
Spread into a shallow dish and refrigerate 30 minutes until firm enough to shape by hand.
7
Shape
Divide into 3 equal portions and shape each into a small oval croquette with your hands.
8
Dredge
Roll each croquette in the panko breadcrumbs, pressing gently until evenly coated on all sides.
9
Bake
Arrange croquettes on a lined baking sheet, mist lightly with olive oil, and bake at 400°F for 18–20 minutes until golden.
10
Plate
Toss the arugula with lemon juice, plate alongside the croquettes, and serve immediately while crisp.
