Instructions
1
Prep
Combine whole wheat flour and a pinch of salt with water; knead by hand for 4 minutes until smooth and soft. Cover and set aside.
2
Rest
Cover the dough with a damp cloth and let rest at room temperature for 20 minutes.
3
Sauté
Heat 1 teaspoon ghee over medium heat; add onion and cook for 3 minutes until softened. Bloom ginger-garlic paste, garam masala, cumin, turmeric and chili powder for 1 minute, then add chicken. Cook over medium-high heat for 6–7 minutes until no pink remains and dry.
4
Cool
Remove the chicken mixture from heat, stir in cilantro, lemon juice and salt, then cool for 5 minutes.
5
Stuff
Divide dough into two balls; roll one into a 4-inch disc, fill with cooled chicken, gather edges to seal, then flatten and roll to 7 inches.
6
Griddle
Heat remaining ghee in a heavy skillet over medium heat; cook the stuffed flatbread for 2–3 minutes per side until deep golden-brown blistered spots appear.
7
Plate
Transfer to a plate, cut into wedges, and serve hot with yogurt on the side.
