Instructions

1
Prep Rinse the rice under cold running water in a fine sieve until the water runs mostly clear, then drain for 5 minutes.
2
Toast Warm the oil in a small saucepan over medium heat and toast the pine nuts for 1 to 2 minutes, stirring, until pale golden.
3
Sauté Add the diced onion to the pan and sauté over medium heat for 3 to 4 minutes until soft and translucent but not browned.
4
Bloom Stir the tomato paste into the pan and cook over medium heat for 1 minute until it darkens slightly and coats the onion.
5
Sauté Add the drained rice to the pan and sauté over medium heat for 2 minutes, stirring constantly, until every grain looks glossy and coated.
6
Simmer Pour in the stock, add the currants, salt and pepper, bring to a boil, then cover, reduce to low heat and simmer for 12 to 15 minutes until liquid is absorbed.
7
Rest Remove the pan from heat and let the rice rest, covered, for 5 minutes.
8
Finish Fluff the rice gently with a fork, folding in the toasted pine nuts and chopped dill.
9
Plate Spoon the pilaf onto a plate, mound it loosely, and serve with the lemon wedge alongside.
