Instructions
1
Prep
Trim all visible fat from the lamb leg, pat dry with paper towel, and place on a small oven tray.
2
Season
Rub the lamb with one clove of garlic, cumin, smoked paprika, olive oil, salt and pepper, coating all sides.
3
Roast
Roast in an oven preheated to 425°F (220°C) for 18–22 minutes until a thermometer reads 135°F (57°C) for medium-pink, surface browned.
4
Rest
Let the lamb rest on a cutting board for 10 minutes uncovered until juices stop pooling and the centre firms.
5
Whisk
Whisk the low-fat yogurt, minced small clove of garlic, sumac and a pinch of salt in a small bowl until smooth.
6
Toss
Toss the red onion with lemon juice and salt in a small bowl, scrunching lightly until softened and pink.
7
Build
Spread the yogurt sauce across a small board or plate, slice the rested lamb thinly against the grain.
8
Plate
Fan the lamb over the sauce, scatter pickled onion and parsley and pomegranate seeds, dust with extra sumac, arrange toasted pita wedges alongside.
