Instructions
1
Prep
Grate the onion and garlic. Finely chop the parsley. Combine ground sirloin, grated onion, chopped parsley, grated garlic, cumin, paprika, egg white, salt and black pepper in a bowl; mix by hand until tacky.
2
Rest
Cover the bowl and chill the meat mixture in the fridge for 15 minutes until it firms up.
3
Grill
Place kofte and tomato halves on a hot grill pan over high heat. Cook kofte 3–4 minutes per side until deeply charred outside and the centre is no longer pink when cut. Grill tomato 2 minutes per side until softened and lightly blistered.
4
Simmer
Bring water to a boil in a small pot over high heat, stir in bulgur, cover and simmer on low heat for 12 minutes until the water is absorbed and the grains are tender.
5
Toss
Fluff the cooked bulgur with a fork, stir through the olive oil and a pinch of salt.
6
Toss
In a small bowl, toss the thinly sliced red onion with the sumac and lemon juice until the onion turns slightly pink and softens.
7
Plate
Spoon the bulgur onto a plate, arrange the kofte and grilled tomato alongside, top with the sumac onions and scatter with parsley leaves to serve.
