Instructions
1
Prep
Trim excess fat from the lamb rack and pat dry. Mix minced garlic, rosemary, thyme, half the olive oil, salt and pepper into a paste.
2
Rub
Massage the herb paste evenly over the lamb rack on all sides and set aside for 5 minutes to infuse flavors.
3
Roast
Heat the remaining olive oil in an oven-safe skillet over medium-high heat, sear the lamb fat-side down 2–3 minutes until deeply browned, then roast at 400°F for 18–20 minutes until 130°F internal temperature with potatoes scattered around it.
4
Rest
Transfer lamb to a cutting board, tent loosely with foil, and rest for 10 minutes until juices stop pooling and temperature reaches 135°F.
5
Deglaze
Set the skillet over medium heat, pour in white wine, and scrape up browned bits for 1 minute until the wine simmers.
6
Reduce
Stir in beef stock and simmer over medium-low heat 4–5 minutes until jus reduces by half and coats a spoon.
7
Plate
Slice the rack between bones into chops, arrange on a plate with potatoes, spoon jus over the top, and scatter with parsley.
