Instructions

1
Prep Pat the beef tenderloin dry, mince the garlic, chop the rosemary and thyme, and thinly slice the shallot and carrot into batons.
2
Heat In an oven-safe skillet over high heat, sear the garlic-and-herb-rubbed tenderloin (seasoned with salt and pepper) 2 minutes per side until deeply browned, about 4 minutes total.
3
Heat Transfer the skillet to a 425°F oven and roast 12 to 15 minutes until an inserted thermometer reads 130°F for medium-rare.
4
Rest Move the tenderloin to a board and let it rest 10 minutes uncovered until the juices firm slightly.
5
Heat Return the skillet to medium heat, add the shallot and cook 2 minutes until translucent, then add vinegar and stock, simmering 5 minutes until reduced by half.
6
Roast Toss the carrot batons with pan juices on a small tray and roast alongside the beef for the final 12 minutes until tender and caramelized.
7
Plate Slice the rested tenderloin against the grain, arrange over the cooked bulgur, spoon the shallot reduction across the top, add the roasted carrots, and finish with chopped parsley.
