Instructions
1
Prep
Trim visible fat from the beef sirloin and cut into 1.5-inch cubes. Peel and slice the carrot and celery stalk. Slice the leek's white and light green part. Finely chop the onion. Chop the parsley and set aside.
2
Sear
Warm the olive oil in a heavy pot over medium heat. Lightly brown the beef cubes for 3 minutes per side until surfaces turn pale golden, not deeply browned.
3
Sweat
Add the leek, carrot, celery, and onion to the pot over medium-low heat. Cook for 5 minutes, stirring often, until softened and translucent without browning.
4
Finish
Add white wine, stock, bay leaf, and thyme. Bring to a gentle simmer over medium-low heat, cover, and cook for 55 minutes until beef is fork-tender. Whisk flour into crème fraîche until smooth, then stir into the stew over low heat for 2 minutes until it thickens slightly. Remove bay leaf and thyme, stir in lemon juice and parsley.
5
Plate
Boil the potato cubes separately in salted water for 12 minutes until tender, drain, then spoon the stew over potatoes in a shallow bowl.
