Sizzling Beef Skillet (Low-Calorie)

Lean beef sirloin strips seared hot then simmered in a skillet with tomato, onion, bell pepper and chipotle for a smoky kick. Cooked with minimal oil and no cream or cheese, this dish keeps the sizzle and char of classic fajita-style Mexican skillets while trimming fat and calories, served over cauliflower rice.

Instructions

1
Prep Slice the beef sirloin thin against the grain, thinly slice the onion and bell pepper into strips, mince the garlic, and chop the chipotle and cilantro; set near the stove.
2
Sear Heat the olive oil in a skillet over high heat and sear the beef 2 minutes per side until browned on the edges but still pink in center, then transfer to a plate.
3
Saute In the same skillet over medium-high heat, add the onion and bell pepper and cook 4 minutes, stirring occasionally, until softened and lightly charred.
4
Bloom Stir the garlic, cumin, and smoked paprika into the skillet and cook over medium heat 30 seconds until fragrant and the raw smell disappears.
5
Simmer Add the chipotle in adobo and canned tomatoes to the skillet, season with salt, and simmer over medium-low heat 6 minutes until the sauce thickens.
6
Rest Return the seared beef to the skillet, remove from heat, and let sit 5 minutes so the beef finishes cooking through in residual heat.
7
Plate Spoon the steamed cauliflower rice onto a plate, top with the beef and sauce, scatter cilantro over the top, and serve with the lime wedge.
