Grilled Trout with Ham (Low-Calorie)
Grilled trout fillet stuffed with serrano ham, finished with garlic, lemon and parsley over a bed of grilled peppers and onion. A lighter take on the Spanish classic, using minimal oil and a small ham portion to keep richness in check while preserving the smoky, savoury profile.

Instructions
1
Prep
Pat the trout fillet dry and season lightly with salt and pepper. Lay the serrano ham inside the fillet's pocket or fold.
2
Toss
Coat the bell pepper and onion slices with half a teaspoon of olive oil until evenly coated.
3
Grill
Place pepper and onion on a preheated grill over medium-high heat for 6 to 8 minutes, turning once, until charred and softened. Transfer to plate.
4
Grill
Brush the stuffed trout fillet with remaining olive oil and grill over medium heat for 3 to 4 minutes per side until opaque and flaking easily, skin-side down first.
5
Finish
Scatter garlic and parsley over the hot trout and drizzle with lemon juice to release aromas.
6
Plate
Transfer grilled trout to the plate with peppers and onion; serve with the lemon wedge.
