Fried Chicken Bites (Low-Calorie)

Bite-sized chicken thigh pieces marinated in ginger, soy and mirin, lightly coated in cornstarch and shallow-fried until crisp, then finished with a scallion-sesame drizzle. Inspired by Japanese karaage, this version uses trimmed thigh, minimal oil absorption and a light dusting instead of a heavy batter for a lower-calorie bite.
