Fried Beef Kidney Bites
Beef kidney is soaked, trimmed and cut into bites, then dredged in seasoned flour and shallow-fried until crisp outside and tender inside. Cumin and sumac season the crust, and the bites are served hot with lemon wedges and a garlic-yogurt dip for a Middle Eastern offal snack.
