Crispy Fried Squash Cakes

Golden Thai squash cakes made from butternut squash bound with rice flour, red curry paste, kaffir lime and egg, then shallow-fried until crisp outside and tender within. Served hot with a sweet-tangy cucumber relish and crushed peanuts, balancing vegetable sweetness against curry spice and fish sauce.

Instructions

1
Prep Coarsely grate the butternut squash into a bowl and pat dry with a paper towel to remove excess moisture.
2
Build Mix in the red curry paste, rice flour, beaten egg, sliced kaffir lime leaves, fish sauce and scallion until cohesive.
3
Chill Rest the mixture in the refrigerator for 10 minutes until the rice flour hydrates and mixture firms.
4
Build Divide into 3 portions and press each into a flat patty about 2.5 inches wide and 0.5 inch thick.
5

8
Plate Arrange squash cakes on a plate, spoon cucumber relish alongside, scatter peanuts and cilantro over top, and serve hot.
