Korean Fried Rice with Fermented Cabbage

Day-old rice stir-fried with diced pork shoulder, kimchi, garlic and gochujang, finished with sesame oil, soy sauce, scallion and a fried egg. Sweet-sour fermented cabbage balances rich pork fat, while toasted sesame seeds and nori add crunch and umami depth.

Instructions

1
Prep Dice the pork shoulder into small pieces, chop the kimchi, mince the garlic, and slice the scallion; keep the chilled day-old rice ready broken into loose grains.
2
Sear Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the pork and cook 4 to 5 minutes, stirring occasionally, until edges brown and no pink remains.
3
Stir Push the pork to one side, add the garlic and chopped kimchi, and stir over medium heat for 2 minutes until the kimchi softens and smells tangy.
4
Fry Stir in the gochujang and kimchi brine, then add the rice, breaking up clumps. Fry over medium-high heat for 4 to 5 minutes, tossing often, until grains separate with reddish color and light charring.
5
Finish Off the heat, drizzle the sesame oil and soy sauce over the rice and toss to coat evenly.
6
Fry In a small nonstick pan, fry the egg in a little oil over medium heat for 2 to 3 minutes until the white is set and the yolk edges are soft.
7
Plate Mound the rice onto a plate, top with the fried egg, and scatter the scallion, sesame seeds, and nori strips over the top.
