Denver Omelette (Keto)
A Denver omelette built keto-style with diced ham folded into loose curds of butter-cooked eggs, studded with sautéed green pepper and onion and melted cheddar. Fresh eggs give the fold structure while the pork and cheese carry the savoury weight. Served with a scatter of chives.

Instructions
1
Prep
Dice the ham, bell pepper and onion, then whisk the eggs with salt and pepper until blended and slightly frothy.
2
Sauté
Melt half the butter in a nonstick skillet over medium heat, add pepper and onion, and cook 3 minutes until translucent and softened.
3
Sauté
Add the diced ham to the skillet and cook 2 minutes over medium heat until warmed through with light golden edges.
4
Fry
Melt remaining butter over medium-low heat, pour in eggs, rest 30 seconds, then draw set edges inward about 2 minutes until barely wet.
5
Plate
Scatter cheddar and ham over one half so the cheese melts, fold the empty half over, slide onto a plate and finish with chives.
