Crispy Fried Beef Jerky (Keto)

Thin-sliced beef sirloin marinated in fish sauce, soy sauce and white pepper, coated in a light egg-and-parmesan crust, then double-fried until dark and shatteringly crisp. Served with a fiery lime-chili dipping sauce, this keto take on Thai beef jerky skips the sugar cure and starchy coating entirely.

Instructions

1
Prep Combine sliced beef sirloin with fish sauce, soy sauce, white pepper, minced garlic and cilantro stems in a bowl; toss until coated.
2
Marinate Cover and chill for 4 hours until the beef darkens slightly and firms from the salt cure.
3
Dredge Dip each marinated beef slice in beaten egg, then press into parmesan and almond flour mixed on a plate, coating both sides.
4
Fry Heat avocado oil in a small pot to 325°F (165°C) and fry beef slices in one batch for 3 minutes until pale gold and set; drain on a wire rack for 3 minutes to firm the crust.
5
Fry Return oil to medium-high heat and re-fry beef for 4 minutes, turning once, until deep mahogany-brown and crackling; work in batches so meat sears rather than steams.
6
Plate Whisk lime juice, sriracha and salt together, pile crispy beef on plate, scatter with sliced red chili and cilantro leaves, serve with lime-chili sauce for dipping.
